Description
Mangrove Jack’s SN9 Wine Yeast 8g is a robust, fast-fermenting wine yeast with a relatively neutral sensory profile. Its versatility makes it suitable for a wide variety of wine styles, particularly high-alcohol and fortified wines.
SN9 handles difficult fermentation conditions and tolerates alcohol levels up to 18% ABV. In addition, it produces relatively high levels of glycerol. This helps enhance body and mouthfeel while allowing the natural character of the grapes or fruit to remain prominent.
Versatile Yeast for Wine, Mead and Fruit Fermentation
Mangrove Jack’s SN9 is an excellent general-purpose strain when you want a clean and relatively neutral fermentation character.
It is particularly suitable for:
- Fortified wines
- High-alcohol wines
- Mead
- Perry
- Vegetable wines
- Flower wines
- Fruit-based wines
- Other wine styles requiring a robust, neutral yeast
Because SN9 has relatively little impact on the flavour profile, the grapes, fruit or other ingredients can provide much of the finished aroma and flavour. Therefore, it works particularly well when you want the original ingredients to remain the focus.

Using SN9 Wine Yeast
You do not need to rehydrate SN9 before use. Simply add the yeast directly to the grape must and stir well.
For best results, maintain the fermentation between 14–28°C.
SN9 includes vitamins and minerals to help support fermentation. However, Mangrove Jack’s still recommends an appropriate nitrogen-based nutrient regime when using this yeast.
Therefore, for wine and mead fermentations that require additional yeast nutrition, see our Vintner’s Harvest Wine Nutrient 100g.
High Alcohol Tolerance with a Neutral Character
SN9 is particularly useful when making higher-alcohol wines because it combines alcohol tolerance up to 18% ABV with a relatively neutral sensory profile.
Furthermore, its high glycerol production can contribute additional body and mouthfeel. As a result, SN9 can produce robust, well-structured wines without masking the natural characteristics of the grapes or fruit.
