Description
Mangrove Jack’s CL23 Wine Yeast 8g is a fast-fermenting, highly robust strain with a very neutral sensory profile. It suits many wine styles but performs particularly well in white, blush and sparkling wines.
CL23 tolerates difficult fermentation conditions and alcohol levels up to 18% ABV. In addition, its clean fermentation character allows the natural aromas and flavours of the grapes or fruit to remain prominent.
Clean and Neutral Wine Yeast
Mangrove Jack’s CL23 produces very little yeast-derived aroma or flavour. Therefore, the grapes, fruit or other ingredients can provide much of the finished wine’s character.
CL23 also ferments sugars thoroughly, producing crisp and dry wines with a firm structure. Because the strain produces relatively little glycerol and leaves little residual sugar, finished wines generally have a low to medium body.
The strain suits many wine styles, including:
- White wines
- Blush wines
- Sparkling wines
- Chardonnay
- Cabernet Sauvignon
- Vegetable wines
- High-alcohol wines

Using CL23 Wine Yeast
You do not need to rehydrate CL23 before use. Simply add the yeast directly to the grape must and stir well.
For best results, maintain the fermentation between 14–32°C.
CL23 includes vitamins and minerals to help support optimum fermentation. However, Mangrove Jack’s still recommends an appropriate organic or inorganic nitrogen-based nutrient regime when using this strain.
Therefore, for wine fermentations requiring additional yeast nutrition, see our Vintner’s Harvest Wine Nutrient 100g.
High Alcohol Tolerance and Reliable Fermentation
CL23 combines a very neutral sensory profile with strong fermentation performance. As a result, it is particularly useful when fermentation reliability matters or when making higher-alcohol wines.
The strain produces low levels of fusel oils and ferments cleanly up to 18% ABV. Furthermore, its ability to handle demanding fermentation conditions makes it a versatile choice across many wine styles.
